Roasted Asparagus

I know I haven’t been anywhere near as active in the last week or so, but I promise I’m alive! Between preparing to move and a quick weekend trip to see my family, I haven’t had a ton of time for writing lately.

With all of that, I’ve been depending a lot on quick, easy-to-make dishes like roasted asparagus. Asparagus is in season right now, and this makes a perfect side dish for anything from grilled salmon to creamy pasta dishes. All you need is one pan, and you’re good to go!


Roasted Asparagus

1 lb asparagus, trimmed

2 TBSP olive oil

1 clove garlic, minced

1 1/2 tsp dried minced onion

1/2 tsp salt

1/2 tsp freshly ground black pepper

Preheat the oven to 425F, and line a baking sheet with parchment paper. In a large bowl, toss the asparagus with the olive oil, garlic, onion, salt, and pepper until evenly coated. Arrange on the pan in a single layer, and put in the oven for 12-15 minutes. Remove, and serve immediately.

Serves up to 4.
