Portuguese Sausage Tacos

Portuguese sausage is one of my favorite meats to work with. It’s rich, it’s spicy, it’s savory, and it goes beautifully in a number of recipes from all over.

One quick way you can enjoy this is in a sausage-and-pepper taco. These come together in less than 20 minutes, and they make a great family dinner! For extra toppings, you could whip up a quick guacamole or get creative with some salsa (adding in some peppers for extra heat would be delicious here!). However, these are still irresistible as is!


Portuguese Sausage Tacos

2 lbs Portuguese sausage, diced

1 onion, julienned

2 cloves garlic, minced

1 red bell pepper, diced

1 Roma tomato, diced

1 green onion, chopped

Taco-sized corn tortillas

2 cups shredded mozzarella

Favorite taco toppings

Put a sauté pan on medium heat, and cook and stir the sausage until evenly lightly browned. Remove the sausage from the pan, add in the onion with a little oil, and cook until tender. Add the garlic, bell pepper, tomato, and green onion. Cook and stir together until the peppers are tender, then add the sausage back in and cook until evenly heated through.

Put the mixture in the tortillas, then top with the mozzarella cheese and your favorite garnishes.

Serves up to 4.
